Tonic water was medicine before it was a mixer. Quinine, extracted from the bark of the cinchona tree, was the only effective treatment for malaria the colonial world had. British officers in India dosed themselves daily, mixing it with gin, lime, and soda water to make it bearable. They weren't inventing a cocktail. They were surviving the tropics.

That drink became the G&T. It became the most ordered drink in premium bars in the world. And somewhere along the way, the story behind it got quietly buried.

We went looking for it.

300 years in one place.

In Java, there is a quinine refinery in Bandung that has been doing the same thing since before the United States existed. The same facility. The same process. Cinchona bark in, quinine out, refined with the kind of patience that only survives when nothing has gone wrong for three centuries. Most ingredients have a story. This one has a record.

Not all quinine is the same.

The cinchona tree has dozens of species. Only one produces quinine in any concentration worth using: Cinchona ledgeriana, developed and cultivated in Java in the 1860s, and still grown there.

The Bandung facility refined its process around this specific variety. That specificity is exactly why it matters. Anyone can put quinine on a label. Very few can say where it actually came from.

We didn't have to go this far.

Veranda sources its quinine from Bandung because it is the original. Not because it is convenient, or the most economical option. Because the reason Veranda exists at all is to trace things back, to find where flavour actually comes from and start there.

Everything else is a shortcut. This is not.

Most modern tonic waters have forgotten where they originally came from.

Following the citrus

Before that, the pomelo

Before the quinine, before the trade routes, before the first officer ever mixed one in the heat of an Indian summer, there was the pomelo.

Botanists call it Citrus Maxima. The mother of all citrus. Every lemon you've ever squeezed, every grapefruit half at a hotel breakfast, every mandarin peeled on a Sunday morning - without exception, all of it descended from this one fruit. The pomelo didn't evolve from citrus. It is what citrus evolved from.

We made it the hero of Veranda's first tonic. Starting at the source felt right. It still does.

Tonic belongs there too - between the spirit and the citrus, the bitter and the sweet. Most modern tonic has been engineered to disappear. The quinine diluted, the bitterness softened, the whole point quietly designed away.

Cold Filled

The cold process

Veranda is carbonated cold. The liquid is chilled before CO2 is introduced, which means it absorbs more gas, more efficiently, producing bubbles finer and tighter than you'll find in most sodas. The texture is closer to champagne than soda water. Refreshment that enhances what's already in the glass, rather than competing with it. It's a small decision that makes a consistent difference.

Finally, the gin

Premium gin had a decade, then a category, then a genuine culture. The people pouring it have thought carefully about what goes in the glass. The mixer category mostly didn't keep pace.

If three quarters of the drink is the tonic, the tonic should be earning its place. Not disappearing. Showing up.

Most drinks tell you where they're going. Veranda tells you where everything came from. That tends to be the more interesting story.
